I must be masochistic. I must be. However, for the sake of fresh, delicious pitas, it was worth it.
This story starts two days ago, on Friday. I was mixing up dough for some pitas following a recipe found in Rose Levy Beranbaum’s “The Bread Bible.” Usually this wouldn’t be a problem. However, that same day, the air conditioner decided to break. Not a problem, I thought, because this dough can sit in the fridge for up to three days. I figured, therefore, that I could just hope that one of the coming days would be cooler and more suitable for bread-baking.
No such luck.
With the air a lovely 27C/82F both in and outside of the house and a high of 32C predicted for tomorrow, I figured that today, I would suck it up and make the pitas. I took the dough from the fridge and did all the shaping and such, then turned on the oven to a hellish 475F. Luckily, each of these only needs three minutes of baking time to puff up to their completed glory, and before I knew it, the baking was over, and I had ten pretty pitas waiting for judgment. My mom, sister, and I all split the first one that came out of the oven.
The air pocket inside was nice and large, perfect for stuffing things in. The first thing I noticed when I bit the pita was that the bread was a little chewy from all of the kneading the dough required. Because of the two days the dough had to ferment, I could taste a very slight but not at all unpleasant sourness, and by the time I got to eating the thicker bottom part of the bread (my sister so nicely ripped off the entire top of my lovely bread cave), I found that the bread taste a touch buttery despite having no butter in it. I like that the flavor ended up subtle and a bit complex all at once… perhaps next time I make pitas, I’ll make some of the dough on the first day and some on the third to see how the amount of fermentation time changes the taste.

I’m happy, but at the same time, I feel a bit sad, too. I feel a bit stuffed up inside.
I finished my last final of my second to last year here at university today, and afterwards, I had the wonderful opportunity to go to dinner and karaoke with a friend I hardly ever talk to and some of her friends, who were very nice. It was fun, and I’m glad that I did it- otherwise, I would have just gone home and been sitting around alone for a while- but at the same time, something is sitting heavy on my chest. I’m sure that this will go away with time, but at the moment, if I let myself get too idle, I think about it, and it’s troublesome. I guess this is a lesson to me about why I shouldn’t let myself be too dependent.
I’ll try not to think about it too much! Tonight was really so much fun, so I don’t want to drown that out. You see, I’m working on being more social just like I promised! 여기 돌아올 때 범식이가 날 자랑스러워 할 수 있기를 바래요.
Haven’t posted (in Korean) in a while, so I’m just going to do some practice. Never mind me!
요즘 난 쾌 바쁘다. 어제 학기가 끝나서 우리 아파트에서 파티 있었다. 친구 범식이랑 떡볶이를 만들었다. 처음 떡볶이를 만들어 본 적이었는데 맛은 괜찮았지만 좀 더 매우면 좋겠다. 다른 친구들도 음식을 만들고 와서 여러 걸 먹어서 배가 아플 뻔 할 정도이었다 ㅋㅋ 그 후에 노래방에 가서 너무 재미있었다. 그런데 아침에 일찍 일어났으니 조금 피곤했다. 2시간이나 동안 노래를 해서 범식이랑 다른 친구하고 bubble tea 마셨다. 아침 12시쯤 범식이랑 우리 아파트에서 같이 돌아갔다. 범식이가 아침에 공항에 가야 돼서 우리가 공항에 같이 가기로 했다.
4시반에 일어나서 아주 피곤했다! 빨리 아침을 먹고 버스로 공항에 갔다. 공항에서 내가 너무 슬퍼졌다. 범식이랑 내가 정말 친해서 범식이가 한국에 돌아가는 걸 보기는 내게 힘들었다. 이별을 하면서 조금만 울었는데 그후 집으로 가는 버스를 기다리면서 호흡할 수 없을 정도로 울었다. 왜 그렇게 했는지 잘 모르겠다… 아마 다른 사람이 내가 우는 걸 보면 안 된다고 생각한다.이별을 하는 것은 늘 힘들지만 그 사람에 매일 생각하면 괜찮다. 나도 곧 집에 돌아갈 것이다. 집에 있는 친구랑 많이 놀 거지만 대학교에서 사귄 친구들에 종종 생각할 거다.
